Watermelon & Green Tea Chilled Soup recipe

Ingredients

  • 1 cup brewed organic green tea, chilled
  • 6 cups cubed watermelon
  • 1 cup fresh-squeezed orange juice
  • 2 tsp. minced fresh ginger
  • 2 tsp. minced candied ginger
  • 1/4 cup fresh mint leaves, packed, plus more for garnish
  • 1 cup plain organic yogurt

Preparation

  1. Combine first six ingredients in blender, and purée until smooth.
  2. Transfer to bowl, and whisk in yogurt.
  3. Ladle into chilled soup bowls, garnish each with one or two mint leaves.
