Quickie Gazpacho

The fresh tomatoes, cucumbers, and peppers are the nutritional stars of this gazpacho, but don’t sleep on the tomato juice. Quickie Gazpacho recipe

Ingredients

  • 4 cups red heirloom tomatoes, chopped, with juices
  • 1 cup cucumber, peeled and chopped, plus ½ cup peeled and chopped for garnish
  • 1 cup tomato juice
  • 1⁄4 cup celery, chopped
  • 1⁄4 cup red bell pepper, chopped
  • 1⁄4 cup sweet onion, chopped
  • 2 Tbs. olive oil
  • 1 Tbs. red wine vinegar
  • 1 tsp. black pepper
  • 1 tsp. sea salt
  • 1 tsp. Worcestershire sauce
  • 1 clove garlic, minced
  • 1⁄2 tsp. hot sauce (optional)

Preparation

Purée all ingredients in a blender, until smooth. Serve at room temperature or chilled. Garnish with chopped cucumber and sour cream, if desired.
